In the last couple of weeks some of you sent me emails asking about healthy vegan snack ideas. Today I want to show you three of my favorite snacks which are both healthy and vegan. I know that it’s kind of hard to snack healthy but believe me, these 3 snacks taste so delicious, that you won’t believe that they are actually plant based and natural. Fall is also snacking seasons since we spent more time at home and need some comfy food. As I’m working from home, I definitely need snacks during the day. Sometimes less, sometimes more. My favorite savory snack are baked chickpeas. I love to eat them at night while watching a movie. They are the perfect alternative for chips or nachos and actually taste a lot better. Baked Chickpeas


First dry your chickpeas (out of the can) as much as possible. You can carefully roll them between a clean dishtowel for example. Then put them in a bowl and add 3-4 Tbsp of olive oil. Now you can add all your favorite flavors like curry, kurkuma, chili or you just add salt and pepper. I like to add a little bit of dijon mustard! Now stir everything well and place your chickpeas on a baking sheet. Then put them in the oven for at leat 30 minutes on 175 degrees. Check if they are crispy and then enjoy! Btw: Chickpeas contain loads of protein!

 

Healthy Popcorn


Heat 3 Tbsp of coconut oil and one Tbsp of agave syrup in a large pot and wait until it’s hot. Drop the popcorn kernels into the hot oil and place a lid on your pot. Shake your pot back and forth to avoid the popcorn get burned. Now wait until every corn popped and put it in a large bowl. Top with coconut oil, dark chocolate, agave or anything else you like and enjoy!

 

Apple slices with Almond butter dip


Mix 5 Tbsp of nut butter (I like to use cashew- or almond butter) with 8 Tbsp of almond milk (you can also use any other plant based milk). Add some cinnamon or vanilla and blend everything well until it’s a smooth dip. Slice apples into pieces and enjoy them with your sweet dip! If you like it even sweeter you can also add some agave or marple syrup.

    Ich liebe Äpfel mit Mandelmus, das ist so super lecker. Zu Banane passt das auch super. Manchmal snacke ich auch gerne Obst mit Dattelmus das schmeckt auch richtig gut. Und es geht natürlich nichts über selbstgemachtes Popcorn 🙂

    Valerie, das sieht ja alles wieder uuunheimlich lecker aus! Mein Favorit ist aber definitiv Popcorn <3 Aber da ich nur Äpfel da habe mache ich mir jetzt glaube ich Apfelscheiben :))
